Also worth knowing: If your package says “candy melts,” “compound coating,” or “almond bark,” it usually does not need tempering. Those coatings are designed to set up shiny without this extra step.

Step-by-step: seeding method

1) Chop and divide your chocolate
Chop chocolate into small, even pieces so it melts quickly and evenly. Divide into:
- 75 percent for melting
- 25 percent for seeding (keep this aside)
If you are a “measure with your heart” cook, here is a visual: for 12 ounces total, melt 9 ounces and seed with 3 ounces.

2) Melt gently until almost smooth
Set the larger portion over your barely simmering water bath. Stir often, scraping the sides and bottom. When the chocolate is almost fully melted with just a few small lumps of chocolate remaining, take it off the heat. Residual heat will finish the job.
Sensory cue: The bowl should feel warm but not uncomfortably hot when you touch the side with your hand. If it feels hot-hot, you are pushing the heat too hard.

- Dark chocolate: melt to 115 to 122 F (46 to 50 C), cool to 82 to 84 F (28 to 29 C), work at 88 to 90 F (31 to 32 C).
- Milk chocolate: melt to 113 to 118 F (45 to 48 C), cool to 80 to 82 F (27 to 28 C), work at 86 to 88 F (30 to 31 C).
- White chocolate: melt to 110 to 113 F (43 to 45 C), cool to 78 to 80 F (26 to 27 C), work at 82 to 84 F (28 to 29 C).
Different brands vary a bit, so use these as guardrails, then confirm with the parchment test.
Dark vs milk vs white
Without a thermometer, think in terms of heat sensitivity:
- Dark chocolate: most forgiving. Warm to melt, then seed until it feels slightly cool and thickened.
- Milk chocolate: melts faster and can scorch easier. Use gentler steam and more frequent stirring.
- White chocolate: the most delicate. Keep heat very low and remove from steam early, then rely on seeding to finish the melt.
